Red Snapper in Banana Leaf!

Wednesday, September 1st, 2010 | Uncategorized | No Comments

One of our great Farragut customers is our first featured “chef”!  He has used a whole red snapper and cooked it in a banana leaf.

1 lime
1 garlic clove thinly sliced
2 scallions thinly sliced
2 tbs Thai red curry paste
4 tbs coconut milk

Clean fish and remove scales – make several slashes in the side of the fish with a sharp knife.
Thinly slice and tuck 1/2 of the lime in the slashes in the fish along with the slivers of garlic.
Grate the lime and squeeze the juice from the remaining lime half and mix with the curry paste and coconut milk.  Spoon over the fish.  Spread the scallions over the fish and wrap in the banana leaf.  Tie firmly with a string and cook on medium-hot grill for 15-20 minutes.  To serve cut the string and fan open the banana leaf.

Thanks, Dwight

Red Snapper, soon to be dinner!

Banana Leaf, ready to be sacrificed for the cause!

Chilean Sea Bass

Both stores have a fresh catch of Chilean Sea Bass today.  This is a wonderful fish with great texture and a rich, mild flavor.  It was grill last night with just some lemon, salt, pepper, and olive oil (to keep it from drying out).  Try some tonight!

The news continues to be good out of the Gulf.  Our boats and other suppliers report that shrimp prices have begun to stabilize.  We are still able to get oysters out of Apalachicola so that is reassuring as well.   It has been an ordeal for everyone in the Gulf region and we are so thankful that the worst appears to be over.  Now the focus must be on recovery for the people and the environment of this vital area.

We at the Shrimp Dock want to thank you, our customers, for your continued support during this difficult summer.  One of the most effective ways for us to help rebuild the livelihoods of our suppliers in the Gulf is to  continue in our mission to purchase only wild caught, fresh Gulf shrimp.  We have been able to sustain this effort throughout this crisis and intend to increase our purchases every week to do our part in helping our partners in the Gulf rebuild their industry.  Please join us in this effort to get the shrimpers and fishermen of the Gulf back to work so that they may restore their lives.

We hope to see you soon at the Dock!
